This is a sparkling wine obtained from Pinot grapes harvested while still unripe. The grapes are selected, hand-picked and soft pressed, with a yield of 55%. Fermentation take place in autoclaves at a controlled low temperature (Charmat method), and the wine is bottled 4-5 months before release for sale. The colour is a very clear, pale straw yellow. It has an intense, persistent, pleasant aroma of fresh yeast. The palate is dry and delicately fruity, with a sweet almond base. The ideal accompaniment to aperitifs or delicate dishes.
Serve at a temperature of about 7-8 °C.
